While traveling in British Columbia at a retreat on Bowen Island, a group wanted a dessert that even Jan, the gluten-intolerant vegan, could enjoy. They put together one that originates in the raw food world, "banana ice cream." Simple to make, they took frozen bananas and processed them until they were soft and creamy.
From five big bananas came five big bowls of "ice cream," topped with melted peanut butter and spicy chocolate. Everyone loved it, so smooth and rich – the girls especially were amazed that it was so low fat (it's only one banana!), and guys thought it was incredibly delicious as well. Some liked it better than ice cream, and others thought it was a great addition to it.
